This easy macaron recipe makes the most delicious & delicate batch of cookies that will melt right into your mouth!!

I’ve listed my tips below to help you out!

These can be a great gift or special treat for your guests for any social gathering. Trust me, your friends /guests will be asking you to make more all of the time!

So let’s get right into it!


Macaron Recipe

INGREDIENTS:
205g powdered sugar
190g almond flour
144g egg whites
190 granulated sugar
Food colour
60ml water
Thermometer

DIRECTIONS:

Part 1:
• Place powdered sugar and almond flour into a food processor and blitz 16 times using short pulses
• Sift mixture into a medium / large bowl
• Add half of the egg whites to the sugar/almond mix
• Mix vigorously until half way combined; at this point you can add in your choice of food colouring (highly recommend using gel)
• Continuing mixing lightly until completed combined. (Don’t not over mix at this point)
• Cover with plastic wrap and place to the side

Part 2:
• In a saucepan on medium/high, heat up the water and sugar. Once it reaches 110°c / 230°f, start whipping the other half of the egg whites in a bowl using a whisk attachment
• Once the sugar syrup reaches 118°c / 244°f, remove it from the stove and start adding it to the whisked egg whites a little bit at a time down the side of the bowl
• Continue beating the meringue until it cools down and becomes a glossy consistency and forms soft floppy peaks

Part 3:
• Add a little bit of the meringue to the batter and mix it together by folding it onto itself
• Continue to gently fold the mixture and add in the remaining meringue
• You’ll know when it’s done mixing once your able to form a figure 8 ribbon without the batter breaking
• Prepare a piping bag with a round tip

Part 4:
• Pipe round macaron shells onto a prepared cookie sheet (Tip: you can print our template and place them under the parchment paper)
• Once done, tap the trays on the counter to remove any air bubbles (Tip: you can use a toothpick to fix any craters/bubbles)
• Allow the shells to rest at room temperature for 30-60mins until a skin forms (Tip: You should be able to touch the top of the shells without causing any indentations)
• Preheat the oven to 165°c / 330°f
• Bake one tray at a time for 12 minutes
• Allow the macarons to completely cool on a wire rack before filling them
• You can fill them with a buttercream, ganache, curd, jam or whatever your heart desires 🙂
